Gluten-Free Chocolate Chip Peanut Butter Cookies


My "work mom," Roblyn, is like a modern day Laura Ingalls Wilder. The woman makes her own butter. I am not that cool. She did give me the recipe for her gluten free peanut butter chocolate chip cookies and I have to tell you-they're amazles. Try it out and let me know what you think! 

Makes 9-12 cookies / 24 SMALL cookies (double recipe for more cookies or for larger cookies)



WHAT YOU NEED:
1 cup peanut butter
1 cup brown sugar
1 egg

1 / 4 tsp baking powder (Rumford is gluten free)
1 / 8 tsp salt (optional – I use 3 cranks of the sea salt grinder)

1 cup of dark chocolate baking chips – or butterscotch chips / any baking chips, or any other dried fruit (raisins)



WHAT YOU DO:
Combine all ingredients together, adding the choc chips at the end


Make into small balls, flatten with hand on cookie sheet – smash w/fork (run fork under faucet after a couple smashes to keep from sticking)


Bake at 350 for 11-14 minutes on regular cookie sheet w/parchment paper

           If using silicone baking sheets – can bake at 375 10-13 minutes



**Let cool before eating….. they taste better cold; if you eat one the same day/warm it may have an odd flavor – do not discard, check again when cold/the next day
